I received a lovely phone call from my neighbour the other day inviting us to come over and collect some field mushrooms from her paddock next door.

What a real treat! Some of them looked like the big portobello mushrooms you can buy at the grocery store.

I’ve never had so many mushrooms to cook with at the same time so I made sure to check out some recipe books to see what I could make with them.

In the end, I decided to cook them all together and put them in the freezer for future meals.

Bags of field mushrooms

Our favourite mushroom recipes have always been a creamy mushroom soup with croutons or stuffed portobello mushrooms with a tomato sauce drizzled over and baked in the oven.

With some salt, pepper and garlic they roast beautifully.

The way I see it, the use of mushrooms in cooking is pretty much unlimited. They can be used on their own, whipped into a yummy stir fry or added to a chunky spaghetti sauce.

Get inspired and cook something toasty to warm you up on these colder nights, it tastes even better if you have someone to share it with.
